Description

Our coconut rice side dish combines fluffy long-grain rice with creamy coconut milk, water, sugar and shredded coconut, resulting in a tropical-inspired side dish bursting with flavor. 


Ingredients

Scale
  • 1 Cup Organic Long-grain white rice
  • 1 Cup Coconut milk
  • 1 Cup Water
  • 1 Tbsp. Coconut oil (or vegetable oil)
  • 1 Tbsp. Sugar
  • 1/2 teaspoon Sea salt
  • 1/4 Cup Shredded coconut


Instructions

  1. Rinse the rice: Place the rice in a fine-mesh sieve and rinse until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky.
  2. In a medium-sized saucepan, heat the coconut oil over medium heat.
  3. Once the oil is hot, add the rice to the saucepan and stir for 1-2 minutes until the rice is lightly toasted and fragrant.
  4. Pour in the coconut milk, water, sugar, salt, and shredded coconut.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan with a lid and let the rice simmer for 15-20 minutes, or until all the liquid has been absorbed and the rice is tender.
  6. Once the rice is cooked, remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes. This allows the rice to steam and become fluffier.

  7. Fluff the rice with a fork before serving. Garnish with additional shredded coconut if desired.
