Ingredients

Scale
  • 1 large turkey leg (approximately 1-1.5 pounds)

Spices:

  • 1 teaspoon Sea Salt
  • ½ teaspoon Pepper
  • 1 teaspoon ea: Paprika, Garlic powder,Onion powder
  • ½ teaspoon ea: Chili powder, Dried oregano, Dried thyme
  • ¼ teaspoon Crushed Red pepper flakes (optional for heat)
  • 2 Tbsp. Olive oil (to help spices adhere and promote crisping)

EQUIPMENT USED:
Dual zone air fryer

Instructions

  1. Prep the Turkey Leg:  Pat the turkey leg dry with paper towels to remove any excess moisture. This helps the seasoning stick and ensures crispy skin.
  2. Make the Oil and Spice Mixture:  In a small bowl, combine the olive oil, salt, black pepper, smoked paprika, chili powder, garlic powder, onion powder, oregano, thyme, and crushed red pepper flakes. Stir until the mixture forms a smooth, fragrant paste.
  3. Season the Turkey Leg:  Rub the spice-oil mixture all over the turkey leg, coating it evenly on all sides. Massage it into the skin and meat for maximum flavor.
  4. Preheat the Air Fryer:  Set your air fryer to 375°F (190°C) and let it preheat for 3-5 minutes.
  5. Cook the Turkey Leg:  Place the seasoned turkey leg into the air fryer basket, skin-side up.  Cook for 25 minutes, then flip the leg over and cook for an additional 15-20 minutes. Use a meat thermometer to check that the internal temperature reaches 165°F (74°C) in the thickest part of the meat.
  6. Rest and Serve:  Let the turkey leg rest for 5-10 minutes before serving. This allows the juices to settle, resulting in tender, flavorful meat.
