Cranberry Walnut Turkey Salad

Ingredients

  • 3 Cups Turkey, diced, chopped, shredded
  • 1/2 Cup Celery, diced small
  • 1/2 Cup Red Seedless Grapes, halved or quartered
  • 1/2 Cup Walnuts, chopped
  • 1/4 Cup Red Onion, diced
  • 1/4 Cup Dried Cranberries

FOR THE DRESSING:

  • 1/2 Cup Greek Yogurt
  • 2 Tablespoons Fresh Lemon Juice
  • 3 Tablespoons Mayonnaise
  • 1 Tablespoon Red Wine Vinegar
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


Instructions

  1. In a small bowl, whisk together the ingredients for the dressing.  Taste for seasoning and add more salt and/or pepper if necessary.
  2. In a large bowl, combine the turkey, red onion, celery, grapes and walnuts.  Add the dressing and stir to combine.
  3. Serve this over a salad or in lettuce wraps for a low carb diet, or on whole grain bread for a sandwich.
